Mallorca attracts many great chefs for its vibrant culinary scene and some of the most amazing ingredients the Mediterranean has to offer. We have asked local private chefs in Mallorca what local ingredients inspire them in their cooking and dishes.

“I think the best ingredient that I use the most and that reminds me of Mallorca is citrus, Orange and Lemons. Driving in the countryside and seeing the Orange and Lemon groves in the winter inspired one of my latest offerings, the Andratx Lemon Dressing. This is Pure Mallorca Sunshine in a bottle. As the dressing is so intensely yellow it looks more like a lemon dressing, though there is a hint of orange in there too. The lemons and oranges in the dressing come from two friends’ gardens in Andratx and Soller.”

Rosa & Andrea – Natural Chef Mallorca

“Choosing Mallorca just for a tomato may sound strange, and obviously, this is not the only reason, but the Ramallet Tomato surely played a part in our decision to join the island’s vibrant culinary scene. It’s not like any other tomato. You wouldn’t use it on salads or eat it as it is. Though with its thick skin and a tender pulp, it’s perfect for rubbing on a crunchy slice of bread and serve it with good olive oil from the Tramuntana and a pinch a Flor de Sal. One of the favourite treats of the Locals, Pa Amb Oli. 

It’s tough, it likes hard surfaces, and it is cultivated in dry, rocky, and sunny terrain, perfectly representing the island’s characteristics. It can last, if properly hung up, for more than 10 months, so you have tomatoes during the winter times. Hence, bars and restaurants serve ‘Pa amb Oli’, all year round, and locals have at least one cupboard in their home dedicated to the storage of this treasure. 

It’s a product we like to work with, and looking deeply at our choices, it might be one of the reasons we are here”.

“Mallorca has many fresh seasonal local ingredients we love to work with. Whether you are Vegetarian, Vegan, Meat or Fish lover your dish will have three ingredients in common: extra virgin olive oil, Mediterranean herbs and salt all from the Balearics. Our personal favourite dishes, we often recommend to our guests, are the hummus with crunchy veggies and a main of wild white fish in sea-salt crust or lamb. Of course, all containing the three magic ingredients”. 

Engelien (Dutch) and Jesus (Spanish) are an enthusiastic couple. She is passionate about people and putting a smile on their face and he is devoted to bringing the most tasteful experience to your table as an experienced chef. Caroline & Paul – Manzana & Peras 

“One of our favourite dishes that is packed with local products is the Honey Roasted Chicken stuffed with Sobrassada, topped with Crushed Almonds & served with ‘Sa Pobla’ Hassleback Potatoes. Sobrassada is a raw, cured sausage from the Balearic Islands, traditionally made with ground pork, paprika, salt and spices (Dolç). Cayenne pepper can also be added to make it hot (Picante). Mallorca is famous for its almonds, the pink and white blossom can be seen throughout the island in early spring. Sa Pobla is an agricultural district near Pollenca, renowned for its salad potatoes that are exported all over Europe.”
